Potato leek soup is the classic recipe of French family cooking. The leek and potato soup is a cheap soup, very easy and quick to make. Light and full of vitamins, very filling, this soup is ideal for warming up and is a treat when the weather is a bit cold. The small pieces of potato and leek that melt in the mouth give this soup its fullness, which can be mixed to taste.

1. Wash and slice the leeks, reserving a sliced white. Put a piece of butter in the casserole or pot, and sweat the leeks in it.
2. Add the 5 washed potatoes, but not peeled (for more flavor), cut into pieces.
3. Wet with water, lightly salt and pepper and add two cubes of chicken stock.
4. While cooking, melt the white set aside and the chopped potato (peeled) too.
5. Leave to cook (add broth, soup or water), until they are tender.
6. Grind the soup and add the tender vegetables (with their cooking juices).
