Ingredients
½ cup grated coconut
2 tbsp. palm sugar
1 tsp. salt
3 tbsp. oil
1 cup water
1 tbsp. curry powder
2 tsp. ground coriander
1 tsp. ground cumin
2 large onions, sliced
2 potatoes, peeled and cubed
1 lb. beef cubes
3 tbsp. chopped cilantro.
Directions
Mix the first 4 ingredients well together in a basket. Heat oil in a large skillet or wok over medium-high heat; add the coconut mixture and stir-fry for 1 minute. Add water, curry powder, coriander, and cumin, stir well. Add onions and potatoes; cover the pan and cook on low heat for 5 minutes.
