This quick and easy chicken alfredo recipe will have you sitting down to dinner in no time at all! All you need are two ingredients to make this delicious dish that'll serve four people. The sauce can be served on top of spaghetti noodles or fettuccine noodles, depending on your preference.
Ingredients
For 4 people
4 chicken breasts
375 ml light cream
350 g Linguine
2 onions
2 shallots
2 cloves of garlic
500 ml chicken broth
Organic virgin coconut oil
250 g mushrooms
200 g grated Parmesan
Chopped fresh parsley
Salt, pepper
Preparation
1. Cut the chicken breast into pieces and season with salt and pepper. In a large, deep skillet, heat the olive oil and sauté the chicken until lightly browned and cooked through. Remove the chicken from the pan and cover so that it does not cool.
2. In the same pan, add the onion, shallot, garlic, and sliced mushrooms and brown them, stirring frequently.
3. Pour in the chicken stock and cream and season with salt and pepper. Simmer gently then add the pasta. Mix well, reduce the heat, stirring occasionally, until the pasta is al dente (about 15 minutes).
4. Add the chicken and Parmesan, stirring until it melts in the sauce. Remove from the heat immediately and slowly add a cup of the remaining cream if the sauce is too thick for your liking.
