This dumpling recipe is for those of you who love potatoes, but not the carbs that come with potatoes. This dish will give your taste buds an amazing experience even if you're still watching your waistline!


Dumplings Potato with Sauce Recipe


Ingredients

* Half a cup of cream cheese

* Half a cup of shredded cheddar cheese

* 2 large potatoes, baked and cooled to room temperature

* 1 tsp salt

* ¼ tsp ground black pepper


Preparation

In a medium-sized bowl, mix together the cream cheese and cheddar cheese until it's all in there nice and cheesily. Set aside. In a small bowl, mix together the salt and pepper. Set aside. Using a potato peeler, remove the skin from the potatoes so that you have smooth potato pieces in there. The yummy insides of the potatoes should be visible now. Using your fingers (and maybe a fork if they're too hot), mash up the potato pieces to make them nice and smooth. Then scoop out chunks of the creamy cheese mixture into your potato-filled bowl, and use your hands to mix everything together evenly.
