Ingredients

1 (16 ounces) can of black beans, drained and rinsed

½ green bell pepper, cut into 2-inch pieces

½ onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

½ cup bread crumbs

Instructions

Heat the olive oil in a large skillet over medium-high heat. Add the corn, onions, garlic, and chipotle peppers. Cook for about 10 minutes. Add the rice, cilantro (if used), and black beans. Cook for about 2 minutes then remove from heat and cool slightly. Transfer to a food processor (in batches if necessary). Pulse to blend but don't puree it completely; there should still be some texture! Transfer the mixture back to the skillet and add agave nectar, salt to taste (remember that feta is salty), and water. Mix well then shape into patties (or divide the mixture into 4 servings). Sprinkle feta on top of each patty just before grilling or frying on both sides until golden brown.
