Stouffer’s Macaroni and Cheese


Ingredients

8 ounces elbow pasta

2 tablespoons unsalted butter

2 tablespoons flour

1 1/2 teaspoons mustard powder

1/2 teaspoon paprika

2 cups whole milk

2 cups Colby Cheese, shredded

2 cups Mild Cheddar Cheese, shredded



Instructions

1. Bring water to a boil. 

2. Add 1/2 cup of pasta, cook for 6 minutes or until al dente (or whichever time is specified on the package). 

3. Drain pasta and rinse with cold water so there is no heat left in it to keep it from sticking together well when combined with the sauce ingredients later on. 

4. In a large mixing bowl, add cooked pasta, ¾ cup of shredded cheddar cheese, and ½ cup of grated American cheese. 

5. Mix the 3 ingredients together and add some salt and pepper to taste.

6. Add one can of evaporated milk, stir together, and then add 1 cup of sour cream (or substitute with some half & half).  The sour cream is added at this time to add richness to the sauce while also adding some flavor. The mixture will thicken within a few minutes as it's stirred constantly while cooking on low heat for 20 minutes or until it reaches desired consistency (see note below).

7. Add ½ cup of milk and turn the stove burner down to low. Stir the sauce constantly as it thickens for 20 minutes or until desired consistency is reached.

8. Garnish this macaroni with cheese.
