Sweet Potato "Rice" Recipe

Who knew that one of the most delicious and nutritious foods on the planet could be made from a humble potato? Not only is it loaded with beta carotene, Vitamin A, and potassium, but it tastes just like rice. No joke! The trick is to slice it into strips or grate it into fine pieces. Once you've done this, fry them in a little coconut oil and add whatever sauces and spices you like for flavor.


Sweet Potato "Rice" Recipe


Ingredients

1.5 lbs sweet potato

3 tbsp olive oil or butter

1/2 tsp kosher salt or to taste

1/4 tsp black pepper freshly ground


Method

Boil or steam a butternut squash or pumpkin with a few teaspoons of olive oil & a pinch of salt & pepper till soft & tender (approximately 20-25 minutes). Let it cool a bit & scoop out the insides. Use a fork to mash it, add in some hummus, and roast in the oven at 450 degrees for 15 minutes. Sometimes I add a squeeze of lemon juice or a teaspoon of honey, sometimes not. Enjoy!
