This Chicken Caesar Salad Recipe is rich, flavourful, and filling. The brown rice adds a healthy twist to the classic salad recipe. Leftovers are perfect for lunchboxes or as a quick dinner!


Chicken Caesar Salad


Ingredients

1 medium ciabatta loaf (or 4 thick slices of crusty white bread)

3 tbsp olive oil

2 skinless, boneless chicken breasts

1 large cos or romaine lettuce, leaves separated

1 garlic clove

2 anchovies from a tin

medium block parmesan or Grano Padano cheese for grating and shaving (you won't use it all)

5 tbsp mayonnaise

1 tbsp white wine vinegar


Directions 

Step 1 Cook the brown rice according to directions. 

Step 2 Slice cooked chicken into small pieces. Drain the caesar dressing in a bowl to remove excess oil and oiliness.

Step 3 Mix together brown rice, chicken, and caesar dressing. Pour the dijon mustard into a bowl. 

Add the chicken caesar salad and toss until fully coated. Serve and enjoy! Recipe Notes If you feel like extra protein, add more chicken to this recipe.
