This is Jinny's recipe for Chicken Roll-ups with Komatsuna. It's no wonder these little bundles of flavor and goodness are a favorite in Japan. The tender chicken and crisp vegetables rolled together and dipped in a deliciously spiced mayonnaise sauce make for an easy, healthy, and satisfying dish.


Chicken Roll-ups with Komatsuna


Ingredients

- 4 flour tortillas 

- 1 cup komatsuna, chopped 

- 2 cups shredded cooked chicken 

- 1/2 cup Parmesan cheese, grated 

- 1 egg, lightly beaten 

- 1 tablespoon sesame seeds


Directions

1) Preheat the oven to 425 degrees F (220 degrees C) and line a large baking sheet with parchment paper or aluminum foil.

2) In a medium bowl, combine chicken, komatsuna, Parmesan cheese, and egg. Place about 1/4 cup onto each tortilla.

3) Roll up tortillas tightly (like you would make sushi). you can put the rolls with the attached side on the prepared baking sheet.

4) Bake at 425 degrees F (220 degrees C) for 12-15 minutes or until tortillas have browned and are crisp. Before serving, garnish with sesame seeds. Serve warm with soy sauce for dipping if desired.
