How To Make Beef Jerky Meatballs


Ingredients

2 lbs. ground beef (80/20)

1 tbsp. dried parsley flakes, divided into 1 tsp. and 1 tbsp. portions

1 tsp. salt, divided into ½ tsp., ¼ tsp., and ¼ tsp.)

2 eggs, beaten with 2 tbsp. water

1 tbsp. dried onion flakes

2 tbsp. granulated sugar or honey


Method

To make beef jerky meatballs, combine ground beef and half the parsley flakes in a medium bowl. Season with ¼ tsp. of salt and form into 12 balls, then transfer to a plate covered with a sheet of plastic wrap. Place your desired number of meatballs in the freezer until frozen solid, then transfer them to an airtight container or freezer-safe bag and return to the freezer until ready to cook. Preheat oven to 400°F (or use your favorite method for raising heat).In a large bowl, whisk together beaten eggs, remaining parsley, granulated sugar or honey, remaining ¼ tsp. salt, and 1 tbsp. dried onion flakes. Set aside. Place frozen meatballs in a large pot over medium heat and cook until they have a bit of a crust on the outside but are still raw inside about 5-7 minutes. Remove from heat, drain the fat out of the pan, then transfer the frozen meatballs to your egg mixture. Using a spoon or spatula, carefully toss together until all the meatballs are coated with egg. Place your desired number of meatballs in an oven-safe dish and place in the oven for 15 minutes (20-25 minutes if they're not frozen).
