If you're craving a s'more, but the marshmallow rules out your mouth and is less than appetizing, this s'mores cupcake recipe is for you! This can be made as a mini version too!
Ingredients
1/2 cup butter, softened
1 1/2 cups sugar
2 large eggs, lightly beaten (room temperature)
1 teaspoon vanilla extract (or another flavor such as almond or coconut if preferred)
1 1/4 cups all-purpose flour* (or substitute with whole wheat flour for more flavor
Directions
Beat well until butter is fluffy and smooth. Add eggs a little at a time until fully incorporated. Once combined then add the vanilla extract and mix again until fully incorporated into the batter. Add in flour until the mixture is smooth and well combined.
*For a gluten-free alternative use gluten-free flour made from rice flour. You will need to increase the amount by 2 tablespoons.
Bake at 350°F for 16-18 minutes or until an inserted toothpick comes out clean. Remove from oven and let cool completely on a wire rack.
