Coconut Chicken Recipe


Ingredients

1 whole cut-up chicken

1 15-ounce can coconut milk

1/4 cup lime juice

2 tablespoons fresh ground ginger

6 garlic cloves, minced

1/2 – 1 teaspoon coarse salt

1/2 teaspoon pepper

Fresh chopped cilantro (optional, for garnish)


Directions

1.) Mix the red curry paste, honey, soy sauce, and coconut milk together in a large bowl.

2.) Add the chicken breasts into this mixture and let them marinate for at least 1 hour or overnight in the refrigerator.  If you are cooking these on an outdoor grill, then remove the chicken from the refrigerator about 30 minutes before you're ready to start cooking to allow it to come to room temperature.

3.)  Thread 4 - 6 chicken breasts onto each skewer (depending on how big they are) and place them onto a hot grill or under a preheated broiler.  You can also cook these in your oven if you don't have a grill.

4.) Cook until the chicken is cooked through and then flip them over to cook on the other side.  Cooking time will vary depending on the size of the chicken breasts, but these are ready in about 8 minutes.
