Ingredients

1/2 cup all-purpose flour

4 large eggs, beaten

1/4 cup grated Parmesan

1 tablespoon chopped parsley

1 teaspoon garlic powder

4 cups seasoned panko breadcrumbs

1 pound thinly cut, boneless, skinless chicken breasts

kosher salt, to taste

freshly ground black pepper, to taste

2 cups vegetable oil


Preparation

#1: Cut the chicken breasts into even slices and pound them until they're flat.

The first step to cooking a chicken cutlet is cutting off any excess fat and slicing the breast into even-size slices. This will allow you to cook them more evenly since thicker portions are always going to take longer to cook than thin ones. After that, use the handle of a wooden spoon, the back of a spoon, or any smooth tool you have nearby to pound the meat. This process tenderizes it and will make it easier for you to cook them evenly without burning through the middle of one side.

#2: Season the chicken with salt and pepper.

Ladies and gentlemen, we are now ready to move on! The next step is seasoning the chicken with salt and pepper. Think of it this way: use more seasoning if you’re planning to eat your cutlets alone or with a light side dish such as a salad.
