Chicken noodle soup is a classic winter comfort food. It's the dish that everyone knows and loves. And while it tastes great in a restaurant or from a can, you can't compare the flavor of homemade chicken noodle soup to anything else.
Ingredients
2 tablespoons olive oil
2 tablespoons butter
1/2 onion, diced
1 pound white or brown mushrooms, sliced
3 celery stalks, chopped
2 carrots, peeled and chopped
4 cloves garlic, minced
1 tablespoon all-purpose flour
2 cups vegetable broth
3 cups homemade chicken
Directions
Melt butter in a large saucepan on medium heat along with oil. Add in onion and mushrooms and cook until soft (about 5 minutes). Stir in celery, carrot, garlic, and flour and continue to cook for 2 more minutes. Pour in vegetable broth and chicken stock, bring to a boil then reduce the heat to a low simmer. Cook until carrots are tender (about 20-30 minutes). Season with salt and pepper to taste.
