Vegetarian Shrimp Scampi with Quinoa


Ingredients

1 pound peeled and deveined shrimp, thawed if frozen.

1 1/2 cups cooked quinoa, cooled.

1 tablespoon olive oil.

1 clove garlic, minced.

1/4 cup chopped fresh parsley.

2 tablespoons grated Parmesan cheese.

Juice of 1/2 lemon (about 2 tablespoons).

Kosher salt and black pepper to taste.

Preparing the sauce:

You can use any cooking oil you want to make the sauce. Olive oil will be best if you're making a vegan version of this dish. If you choose to use other cooking oils, we recommend that you add a little bit of vinegar to help balance out its flavor with the lemon juice. It'll add another level of tartness that can really help bring out the sweetness of the lemon juice.

Add the oil to a heavy skillet, then heat it up over medium-high heat. Add the garlic and red bell pepper and cook for about one minute.

Add the shrimp and any remaining lemon zest, stir it in, then add the quinoa. Stir the mixture until everything is coated with the oil and starting to fry.
