Vegetarian Shrimp Scampi with Quinoa

The vegetarian shrimp scampi with quinoa recipe talks about how you can make scampi from shrimp without using any seafood as the traditional seafood version does. This is a perfect dish for those who are looking out for an alternative way to enjoy quinoa. The vegetarian shrimp scampi with quinoa recipe is not only healthy and delicious but very easy to prepare as well.

Vegetarian Shrimp Scampi with Quinoa

1 pound peeled and deveined shrimp, thawed if frozen.

1 1/2 cups cooked quinoa, cooled.

1 tablespoon olive oil.

1 clove garlic, minced.

1/4 cup chopped fresh parsley.

2 tablespoons grated Parmesan cheese.

Juice of 1/2 lemon (about 2 tablespoons).

Kosher salt and black pepper to taste.

Preparing the sauce:

You can use any cooking oil you want to make the sauce. Olive oil will be best if you're making a vegan version of this dish. If you choose to use other cooking oils, we recommend that you add a little bit of vinegar to help balance out its flavor with the lemon juice. It'll add another level of tartness that can really help bring out the sweetness of the lemon juice.

Add the oil to a heavy skillet, then heat it up over medium-high heat. Add the garlic and red bell pepper and cook for about one minute.

Add the shrimp and any remaining lemon zest, stir it in, then add the quinoa. Stir the mixture until everything is coated with the oil and starting to fry.

Cooking shrimp scampi with Quinoa:

Sprinkle in 1/2 teaspoon of salt while stirring constantly with a wooden spoon or spatula. Bring the sauce to a boil, stirring occasionally so that everything doesn't stick on the bottom of the pan again after a few minutes of cooking.
