This is an incredibly healthy and tasty dish to prepare at home. It will take no more than 20 minutes for you to cook it up, and it's absolutely worth the effort. We have tried this recipe numerous times with significant success. The thing that really makes the difference is the combination of feta cheese, tomatoes, and parsley. If you want something to spice up your weeknight meals, give this one a try!


W5 Pasta with Tuna and Spinach Recipe


Ingredients

4 servings

400g spaghetti (spaghetti)  (approx 1lb)

Handful of flat leaf parsley (flat leaf parsley)  (approx 20g - 0.7 oz)

4 tbsp extra-virgin olive oil (extra virgin olive oil)  (approx 56g - 2 oz)  

240g tuna in water (tuna in water) , drained, flaked     (approx 8.6oz)

300g cherry tomatoes (tomatoes)  (approx 1lb)

150g feta cheese (feta cheese) , cubed     (approx 7.2 oz - 250g)

4 tbsp julienne parmesan (julienne parmesan) , finely grated     (approx 40g - 1.4 oz)


Method

Preheat oven to 200C, 350F, Gas mark 6. Toss together parsley and olive oil in a bowl. Pour onto a baking tray and toss again so the parsley gets coated with oil. Spread out evenly on the dish and place in the oven for 10 minutes until slightly golden brown and fragrant. Heat a large pan with some olive oil over medium heat, and add the tuna flakes. Toss them in the pan until they turn white. Add the cherry tomatoes and saute for half a minute. Season with salt and pepper. Add spaghetti, feta cheese, parmesan, and toss well to combine. Remove from heat when the spaghetti is al dente (about 9 minutes).

Boil water for the spaghetti in a large pot or saucepan according to package instructions (usually on average about 10 minutes).
