Ingredients

2 cups all-purpose flour

1 tsp. salt

1 tsp. sugar

1 cup warm water (you may need more)

Preparations

Cornmeal for sprinkling on pan or peel if using one.

The first step is to gather all of your ingredients. For a thin crust, they suggest one cup of warm water (105°F), one tablespoon of active dry yeast (not instant), and one teaspoon of sugar. Once the yeast has dissolved in the water for five minutes or so, they say that three cups of all-purpose flour should be added and mixed until well blended.

Next, they say to continue adding one tablespoon of extra virgin olive oil, two teaspoons salt and two teaspoons dried Italian herb blend along with one tablespoon of cornmeal. They say to knead the dough for about ten minutes, set the dough in a greased bowl, cover it and let it rise for about 45 minutes.

Once it's risen and doubled in size, you should punch the dough down and move on to the next step. They recommend rolling out the pizza dough into circles that are about 5 ½ inches in diameter.

Next, they suggest spreading one cup of pizza sauce onto the crust. Then they say to layer on toppings such as five ounces of shredded mozzarella, five ounces of sliced mushrooms, five-six ounces of pepperoni, and finally one-half cup grated Parmesan cheese.

Finally, according to the book authors, you may want to add a pinch of crushed red pepper flakes for a little extra pizzazz. They promise that the crust will be thin and crispy – just like true Italian-style pizza.
