Ingredients
1½ cups all-purpose flour
3 tablespoons cocoa powder
1 teaspoon baking soda
½ teaspoon salt
⅔ cup (150 grams) butter, room temperature or ¾ cup vegetable oil (recommended for cake batter) or ½ cup buttermilk (recommended for frosting)
¼ cup canola oil (or any mild-flavored vegetable oil; the flavor will be less noticeable in the finished product)
2 eggs, at room temperature and lightly beaten to blend well with other ingredients. The eggs should weigh about 3 ounces.
Directions
Preheat the oven to 350 degrees. Line a 12-cup muffin tin with paper cupcake liners, or use paper liners to line two 8-inch round cake pans for cupcakes. In a large bowl, sift together the flour, cocoa, baking soda, and salt.
Set aside. Fit an electric mixer with the paddle attachment and beat together the butter and oil on medium speed until smooth, about 2 minutes. Scrape down the bottom and sides of the bowl with a rubber spatula, add eggs and ¼ cup water; beat on high speed for another minute until combined.
Reduce the mixer speed to low and add the dry ingredients in three additions. Blend just until incorporated, scraping down the sides of the bowl with the rubber spatula. Use a medium cookie scoop or 2 large spoons to divide batter evenly among cupcake liners.
Bake at 350 degrees for 15 minutes or until a toothpick inserted in the center comes out clean (cookies will brown slightly on top, but do not over-brown). Cool cupcakes on a wire rack before frosting.
