Today, I'm going to show you how to make a deliciously healthy yet hearty Tuscan Pasta with shrimp and clementines. This dish is so easy to make and can be tweaked in any way you want. Whether it's for a fancy dinner party, an impromptu get-together with friends, or just an evening meal for two, this dish is perfect!
Ingredients
8 oz. linguine pasta or spaghetti
2 tablespoons extra-virgin olive oil, divided
1 lb. uncooked shrimp, peeled, deveined and tails removed
Preparations
Step 1: Cook Your Pasta
Prepare your pasta according to the directions on the package. Add some olive oil to a large skillet over medium heat. Add shrimp and season with salt and pepper. Cook the shrimp for about 2-3 minutes per side until it is pink and cooked through. Remove from heat. Top your pasta with cheese and cover for about 1 minute or until the cheese melts.
Step 2: Prep Your Vegetables
In a small bowl, combine shrimp with 1/4 cup orange juice, 1/4 cup water, and 2 tablespoons olive oil. Stir to combine.
Step 3: Finish the Pasta & Sauce
When the pasta is cooked as directed on the package, pour the shrimp mixture into a colander and rinse with cold water. Drain well, add shrimp to pan and toss well. Add spinach and saute for about 2-3 minutes until spinach is wilted. Remove from heat and gently stir in black beans and lemon or lime juice to taste.
