How to make chicken & dumplings in a slow cooker?

The slow cooker is a must-have in any home, especially if you love to make hearty meals like comfort food. It's easy to throw in ingredients at the start of the day and then forget about it all day, coming home to a delicious meal that will warm you up on those chilly winter days. So, why not try out this recipe for chicken and dumplings? You'll find that it's much easier than trying to make it on your stovetop!

Chicken and Dumplings Recipe:

Dice up two medium-sized Boneless Skinless Chicken Breasts into small cubes (or use pre-sliced pieces of boneless skinless chicken breasts). In a large mixing bowl, mash one whole cup of cooked, boiled white rice with one egg yolk, and two tablespoons of melted butter. Stir well until the rice is evenly distributed in the butter. Add half of the chicken cubes to the mixing bowl, then top with half of the chicken gravy mixture (condensed from cooking some chicken legs or other leftover pieces) and all of the dry ingredients (3/4 cup all-purpose flour and 1 teaspoon salt). Mix it all up together with a wooden spoon. Place this batter into your greased slow cooker. Set your timer for seven hours on not less than a low heat setting. (Your chicken and dumplings will not come out as tasty if you place them on high heat.)

Chicken Gravy:

Mix one cup of water, two cups of chicken broth, and half a teaspoon of salt in a saucepan. Bring to a boil on high heat. Add the remaining chunks of chicken to the saucepan and simmer for 10 minutes. Remove from heat and pour into the slow cooker before serving. You can also add some sliced carrots or green beans for added flavor.

Serve with some crackers and butter for dipping! You may optionally sprinkle some sesame seeds over your meal just before serving as well (but this is not required). Enjoy!

You will find that this recipe is a surprisingly easy one to make. Just remember that you can adjust the cooking time of your chicken and dumplings, depending on how long it takes for the rice to absorb all of the liquid. You can either throw in your ingredients at the start of your day and leave them simmering all day until dinner, or you can speed at work, hand-removing the sides, putting them back on, and setting it again. Make sure to stir the rice frequently with a wooden spoon so it does not clump together too much.

Why does this recipe use cream of chicken soup?

Cream of chicken soup is commonly used in recipes as a base for sauces and casseroles. It provides a creamy texture and a rich, savory flavor to dishes. The soup is often used as a convenient way to add flavor and moisture to a dish, as well as to bind ingredients together.

Ingredients:

  • 2-3 boneless, skinless chicken breasts
  • 2-3 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp butter
  • 2/3 cup milk

Instructions:

In a large crock pot, combine chicken, potatoes, onion, carrots, celery, mixed vegetables, cream of chicken soup, chicken broth, thyme, basil, salt, and pepper. Stir well.

Cover the crock pot and cook on low heat for 6-8 hours, or until chicken is fully cooked and vegetables are tender.

In a medium coliseum, whisk together flour, incinerating grease paint, and swab. Cut in adulation until the admixture resembles coarse motes. Stir in milk until a soft dough forms.

Drop spoonfuls of dough onto the surface of the chicken mixture in the crock pot.

Cover the crock pot and continue cooking on low heat for an additional hour, or until the dumplings are fully cooked and puffed.

Serve the chicken pot pie and dumplings hot, garnished with fresh parsley or thyme, if desired.

Enjoy your Crock Pot Chicken Pot Pie and Dumplings!
