INGREDIENTS
3 tablespoons olive oil
5 cloves garlic, minced
1 jalapeno, seeded and diced
½ teaspoon red pepper flakes
1 pound boneless chicken breasts, cut into cubes
2 tomatoes, chopped
½ cup kalamata olives Salt and pepper to taste
1 head lettuce leaves
12 small pieces of feta cheese
DIRECTIONS
In a large skillet set over medium heat, pour in the oil.
Add the garlic and jalapeno, and sauté for about 2 minutes, or until the garlic softens.
Add in the red pepper flakes. Sauté for 1 minute more. Add in chicken and tomatoes; cook for 4 to 5 minutes until chicken is cooked through and the sauce thickens. Stir in olives, salt, and pepper. Set aside to cool slightly.
Preheat your oven to 350 degrees F. Roll or fold each lettuce leaf in a small bowl filled with feta cheese. Spoon in the chicken mixture into each lettuce cup and serve.
