Fried Chicken and Broccoli Mac and Cheese

 If you're craving both fried chicken and mac and cheese, but are not sure how to combine the two in a satisfying way, we've got the perfect recipe for you. It features crispy fried chicken pieces that contrast nicely with gooey mac and cheese, topped with crunchy panko bread crumbs.


Fried Chicken and Broccoli Mac and Cheese


Ingredients

 2 cups of cooked broccoli, 

8 oz. Cheddar cheese, 

1/4 cup milk, 

1/4 cup heavy cream, 

4 eggs

3 cups of chicken breast (boneless skinless).


Preparations

Preheat your oven to 350 degrees. Cut up the chicken into bite-sized pieces and place them in a bowl with salt and pepper. Add the garlic powder and flour; mix everything well until it's evenly coated.

Ready the baking sheets by lightly coating them with oil spray. Then place some parchment paper on top to put your chicken after it's been fried.

Make sure your oil is in a hot pan before you start to cook the chicken. You want it hot to ensure that the chicken is cooked through before it starts to burn. Once the oil is hot, add your chicken and cook for about 10 minutes, until it's golden brown and crispy.

If you're using a nonstick skillet, 5 minutes should be enough time for your chicken to crisp up nicely!

Next, drain all of the excess greases from the pan into a bowl or cup. Add all of that grease back into the pan and let it heat up again until it's really hot.

Now you're ready to fry your chicken. If you're using tongs to handle the chicken, be sure to use potholders to keep you from burning your hands! Fry the chicken for approximately 2 minutes on each side.

When the chicken is done cooking, place it on a baking sheet lined with paper towels. This will help soak up any extra grease. Let it sit until you're ready to assemble your dish!

The next day: Lightly coat a large nonstick skillet with oil spray, and heat over medium-high heat until hot. Add the chopped broccoli, salt, and pepper; cook for about 5 minutes until the broccoli has turned bright green and is almost tender-crisp. Remove from heat and set aside.
