Ingredients
4 flour tortillas (whole wheat or white)
2 cups shredded rotisserie chicken
1 cup chopped cherry tomatoes
2 tablespoons whole wheat flour
1 egg or substitute (~2 tablespoons egg beaters with water) Salt Pepper Garlic Powder Dill Sprig Fresh Parsley (optional)
1 jalapeno pepper,
Seeded and diced (optional)
Preparations
- Preheat oven to 425 degrees Fahrenheit.
- Cut tortillas in half, then place the halves on a baking sheet.
- In a small bowl, beat together the egg and water (or substitute). Brush half of the egg mixture onto each of the tortillas.
- Top each tortilla with chicken, tomatoes, and chopped dill sprigs. Sprinkle with garlic powder and salt to taste and top with diced jalapenos (optional).
- Bake for 8-10 minutes or until golden brown on top.
