Ingredients
One 12 oz. can rinse, drained, and chopped tomatoes
- One 6 oz. can tomato paste
- 3 cups chicken stock
- 1 1/2 teaspoons salt
- Black pepper and red pepper flakes to taste - 8 ounces of tortellini pasta (dry weight)
- 2 tablespoons butter or olive oil
Preparations
1. In a large pot, add the tomatoes, tomato paste, chicken stock, salt, black pepper, and red pepper flakes. Bring the soup to a boil then lower the heat and simmer for 25 minutes.
2. Add the tortellini pasta and simmer for an additional 15 minutes.
3. Add the butter and garnish each bowl with Parmesan Cheese, if desired. Serve immediately.
