Ingredients
2 tablespoons olive oil
1 onion, finely chopped
1 1/2 teaspoons ground ginger
1 teaspoon curry powder (or more, to taste)
1/2 teaspoon salt
Freshly ground black pepper, to taste
3 pounds sweet potatoes (about 3 large), peeled and cut into 1-inch cubes (about 6 cups)
2 Granny Smith apples, peeled and chopped into 1-inch pieces (about 2 cups)
Directions
Place a large pot over medium heat. Add the oil and onion. Cook for 4 to 5 minutes until softened, stirring occasionally.
Add the ginger, curry powder, salt, and pepper. Cook for 1 minute, stirring constantly. Add the sweet potatoes, apples, and 6 cups of water. Cover and bring to a boil over high heat.
Reduce heat to low and simmer for 20 to 25 minutes or until the sweet potatoes are tender when pierced with a fork. Remove from the heat and let cool for about 10 minutes.
Use an immersion blender to puree the soup until smooth (alternatively, use a regular blender or work in batches and blend until smooth). Serve immediately.
