Chocolate Fudge Brownies

Ingredients

1 cup (2 sticks) of unsalted butter

1 1/4 cups granulated white sugar

2 1/4 cups all-purpose flour

2/3 cup cocoa powder

1 teaspoon salt, if desired

2 teaspoons pure vanilla extract, if desired

6 large eggs, if desired, at room temperature.

2 cups sifted all-purpose flour;

1 tablespoon baking powder; and 1 teaspoon salt.

Directions

1. In a large saucepan over medium heat, cook butter and sugar, stirring frequently, until butter melts and the mixture bubbles. Remove from heat; whisk in sifted flour, cocoa powder, and salt (if using). Stir until smooth.

2. Whisk in eggs 1 at a time until just incorporated, and then stir in vanilla extract (if using). Spread batter evenly into prepared pan; smooth top with a rubber spatula.

Bake for 35 to 40 minutes for fudge brownies or 20 to 25 minutes for cake-like brownies (center will remain slightly bouncy when pressed), or until a wooden toothpick inserted into the center comes out clean or with just a couple of moist crumbs clinging to it.

If using an oven thermometer, when the sides of the pan start to brown, but the center remains pale and wet, it is ready. If using the toothpick method, check at 20 minutes to gauge doneness. Cool completely in pan on wire rack. Cut into squares. Store in an airtight container at room temperature for up to 2 weeks (or freeze for up to 1 month). Makes about 6 dozen brownies when cut into 18 squares per layer.
