Today, I will introduce you to a quick and easy recipe for the most delicious and fresh-tasting creamy chicken pasta salad with capers and raisins. This dish is ideal for lunch or dinner. It's light, refreshing, healthy, inexpensive to make, and easy enough that even inexperienced cooks will be able to create it in minutes! The sauce is creamy, flavorful, and sweet thanks to a little bit of tahini. It’s going to be so good!
Ingredients
8 oz bowtie (farfalle) pasta
2 tbsp extra virgin olive oil
1 lb boneless skinless chicken breasts, cooked and diced into 1" cubes
1 cup chopped celery
1/2 cup green olives
6 tbsp olive oil
1/4 cup lemon juice
1/4
cup cider vinegar
2 tbsp dijon mustard
1 tsp dried oregano
3/4 tsp tarragon
2 garlic cloves
Salt and pepper to taste
Directions
Cook pasta according to package directions. Drain well in a colander, rinse with cold water, then drain again. Combine with chicken, celery, and olives.
Whisk together the oil, lemon juice, vinegar, mustard, oregano, and tarragon in a large mixing bowl. Add salt and pepper to taste. Pour dressing over pasta mixture; toss to coat well.
Cover with plastic wrap and refrigerate for a minimum of 4 hours (I think it is better to marinate overnight).3/4 cup Italian parsley leaves 1/4 cup capers, drained 1 tbsp sliced black olives for garnish
Dressing Ingredients: Combine all ingredients in a jar or container with a lid. Shake vigorously until emulsified (if you don't have an emulsion blender it might not mix so well).
