Here is a great, simple recipe to help you make the main dish that will be perfect for your summer cookouts. And, best of all, it only requires one pot! This Italian Potato Pasta Salad combines the classic flavors of Italy with Mediterranean flavors. This salad is light and refreshing and is sure to become an instant favorite in your home.
Ingredients:
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 1 clove of garlic, minced
- 2 cups cooked and rinsed pasta (uncooked is okay)
- 3/4 cup raisins or dried cranberries
- 1/3 cup white wine vinegar
- Salt to taste
- Fresh ground black pepper to taste.
- 4 boneless skinless chicken breasts, cut in half horizontally and then sliced into two-inch strips.
- 8 ounces of dry Italian bread crumbs.
- 1 teaspoon of Italian seasoning.
- 1/2 teaspoon of salt.
- 4 tablespoons parmesan cheese.
Directions:
- Chop onions and garlic and then saute in olive oil over medium heat for about five minutes or until onions become transparent.
- Add in salt and pepper
- Add in raisins and wine, and allow to simmer on low for about five minutes. When you are supposed to be salting the chicken breasts, add that into the pot as well. Once the liquid has reduced by half (about 10 minutes) add in your pasta and stir everything together well so that it is coated evenly with the sauce.
- Add your chicken breast strips, coating them with the sauce as well.
- Add your dry pasta to the pot and toss everything together well.
- Pour it into a large bowl and allow it to cool while you toast your bread crumbs in a frying pan.
- While the crumbs are browning, try to break up any larger pieces of pasta with a spatula or spoon.
- Once browned stir in your seasoning and parmesan cheese then let sit on low for about five minutes.
- Serve and enjoy.
