In the Middle East, people believe that chicken in the absence of any other source of protein is a delicacy worth dying for. For this reason, many people living in the Arab world prepare a dish called zatar with various herbs that some would argue has magical powers in addition to being tasty.
Ingredients:
• 2 chicken breasts, cut in half
• 1/2 teaspoon of salt
• 1/4 teaspoon of ground black pepper
• 2 tablespoons of olive oil
• 1 tablespoon lemon juice
• 3 tablespoons dried thyme leaves and oregano leaves, chopped fine.
Instructions:
Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
Place chicken on a baking sheet sprayed with cooking spray and sprinkle with salt and pepper.
In a small bowl mix the olive oil, lemon juice, thyme, and oregano together.
Drizzle the mixture over the chicken. Bake chicken for approximately 15 minutes, until cooked through.
