This is a great dish that's sure to please even the most finicky of palates.

Ingredients

4 chicken livers 

8 slices bacon 

2 ripe avocados

1 medium tomato.


Method

Bake your livers at 350 for about 20 minutes, or until cooked all the way through.

While your chicken livers are baking, you'll need to make your salsa for serving.

Next, you'll need to dice up half an avocado (in some cases I will use a whole avocado instead of halving it) and wash 1 tomato.  Place your tomatoes and avocados in a bowl, season with salt & pepper and add the juice of 1 lime.  Mix together and set aside for later.

Now, let's bring the bacon wrapped livers back out of the oven and let them cool down, place them on a cutting board and slice all the way through so that you have two halves.  This will be fun because bacon is awesome, even if you cut into it!

Just look at all that goodness!  You can also use this step to remove any pink/uncooked bits from the livers.  They are super healthy but they don't taste nice if they're not cooked properly.  Once you've sliced your livers, slice up your bacon.  If you're going to use all 8 slices of bacon, shred and set aside for later.

This is where we get to put our awesome salsa together!  First, we start by cutting the top off of an avocado.  Using a spoon, remove the hard part of the avocado and place in a bowl with extra lime juice (to keep it from browning).

Next, take half an avocado and squeeze out the rest of the juice into a bowl on the side.  Cut your tomato in half but don't cut through all of it yet.
