Ingredients:
1 cup uncooked orzo
1/2 cup diced cucumber
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Instruction:
Cook orzo according to package instructions. Drain and rinse with cold water.
In a large bowl, combine cooked orzo, cucumber, tomatoes, red onion, parsley, and mint.
