This stuffing recipe is going to make you feel all warm and fuzzy inside. It has a little bit of everything, including vegetables, cornbread, and bacon, that's covered in creamy sage-butter. You really can't go wrong with this recipe!
Ingredients:
- one roll of turkey breast (10 inches)
- 1 cup cola, preferably Pepsi or Coca Cola
- 1 can cream of mushroom soup
- ½ cup sour cream or plain yogurt
- one package dried onion slices
- one package dry stuffing mix
- ¼ tsp black pepper
- salt and freshly ground pepper to taste (optional)
Directions:
Preheat the oven to 350 degrees.
Prepare the baking method of your choice. Use one half of a roll of turkey breast per oven bag.
Place the roll in a large baking dish, and place it in the oven, covered tightly with aluminum foil.
Bake in a covered casserole dish for 1 1/2 hours at 350 degrees or until the center thermometer reads 160 degrees. Allow about 10 minutes cooling time before slicing – if you do not have 10 minutes to cool, set the dutch oven on high heat and wait for 20 - 30 seconds. This will help with keeping the stuffing from scorching on top and keep it from drying out too quickly.
If you do not have a thermometer, use the "jiggle test". Do not be alarmed, it is supposed to jiggle! Actually, the turkey breast should be jiggling when sliced.
After allowing it to cool for 10 minutes – carefully remove the aluminum foil and place the turkey breast in a large mixing bowl.
Drain and discard any grease from the baking pan. Leave about 2 tablespoons of grease in the bottom of the pan (depending on how turkey-greasy your pan is) as this will help keep your roll moist during baking.
Use kitchen shears to cut away any fat pockets from around the turkey roll.
Use a knife to slice the turkey roll into ¼ inch slices.
Place cooked and cooled turkey in a large mixing bowl.
Pour cola over the top of the turkey and mix until all of the slices are moistened.
Set aside for about 5 minutes for flavors to combine.
Stir in mushroom soup, sour cream, onion, salt & pepper and stuffing mix. Mix well until all ingredients are coated with a flour mixture (this will give it that nice crunchy coating).
Mix thoroughly and taste test - add more salt if desired (I won't tell if you add more pepper!). Cover with plastic wrap or aluminum foil while preparing other vegetables.
