This General Tso Chicken Recipe is an easy Chinese dish that will have your favorites begging for more. It is one of the best recipes to make when you're craving meat and vegetables! It's so simple, with ingredients like chili powder, soy sauce, honey, and salt.
Ingredients:
- 2 teaspoons cornstarch
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons water, divided
- 3 tablespoons peanut oil, divided
- 6 skinless, boneless chicken breasts (or 2 whole chicken breasts)
- 1/4 cup soy sauce
- 1 tablespoon sugar
- 3 cloves garlic, minced
- 1/4 medium onion, chopped
- 3 scallions plus more for garnish
- 8 ounces button mushrooms with stems removed and sliced
- 1 package of dry ramen noodles
- 2 cups canned pineapple chunks in juice or crushed with a fork
Method:
Preheat the oven to 350 degrees Fahrenheit.
In a small bowl, combine the cornstarch, baking powder, and salt; set aside.
In a medium-sized bowl, combine 1 tablespoon of the water with the peanut oil and whisk until emulsified. Set aside.
1 In another medium-sized bowl, combine the soy sauce, sugar, and garlic; mix well. 2 Set these ingredients in a second smaller bowl while you finish preparing the chicken. 3 In a third medium-sized bowl, add the scallions, mushrooms, and ramen noodles; set aside. 4 Slice the chicken into bite-sized pieces and then toss with the cornstarch mixture. 5 Heat a large skillet or wok over high heat until VERY hot. Add 2 tablespoons of peanut oil and swirl in the wok to coat the entire surface. When the oil is hot, add half of the chicken pieces, stirring constantly to avoid sticking or burning.
6 Cook for 1 minute and then transfer to a bowl. Add a little more oil if necessary (or more if your skillet/wok is larger) and cook the second half of the chicken until no longer pink in color - about 2 minutes.
Serve each plate with an equal portion of noodles, pineapple, scallions, and chicken pieces. Garnish with more fresh scallions.
