Ingredients:
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 yellow onion, sliced into thin strips
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1 tsp. paprika
- 1 tsp. cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tbsp. olive oil
- 8 oz. cream cheese, softened
- 1 cup shredded cheddar cheese
- 8 flour tortillas
- Fresh cilantro for garnish (optional)
Instructions:
Preheat oven to 375°F.
In a large pan, heat olive oil over medium heat.
Add sliced chicken, bell peppers, onion, and minced garlic to the pan.
Season with chili powder, paprika, cumin, oregano, salt, and pepper.
Cook until chicken is browned and vegetables are soft about 10-12 minutes.
In a large bowl, mix together the cream cheese and shredded cheddar cheese.
Grease a 9x13-inch baking dish.
Layer four tortillas on the bottom of the baking dish, overlapping as needed.
Spoon half of the chicken and vegetable mixture over the tortillas.
Spoon half of the cheese mixture over the chicken.
Repeat with the remaining tortillas, chicken mixture, and cheese mixture.
Cover the baking dish with aluminum foil.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Remove the foil and bake for an additional 5 minutes to brown the cheese.
Garnish with fresh cilantro (optional).
