 I propose to you today a beautiful recipe Tilapia fillets, decorated with capers, delicious dried tomatoes in oil, and black olives. A good weekday meal quickly prepared.

TILAPIA Fillets Mediterranean Style...


INGREDIENTS

3 tbsp. olive oil, divided

4 cups grape tomatoes, cut in half

Salt and black pepper

4 cloves of garlic, finely chopped

1/2 tablespoon dried oregano

1 cup green olives with lemon, chopped

4 tilapia fillets, fresh or frozen (if frozen, thaw before cooking)

1/3 cup Feta cheese, crumbled

PREPARATION

Preheat oven to 350°F.

Grease a 9 x 13 baking dish. Set aside.

Heat 2 tablespoons of olive oil in a skillet over medium heat.

Add tomatoes. Season with salt and pepper and cook for 5 minutes, stirring occasionally.

Stir in the garlic and continue cooking for 1 minute.

Remove from the heat.

Add oregano and chopped olives. Mix in.

Transfer the mixture to the prepared baking dish.

Season the tilapia on both sides with salt and pepper.

Arrange the tilapia over the tomatoes in a single layer.

Drizzle with the remaining olive oil.

Bake, uncovered, for 22-25 minutes or until fish is cooked.

Remove from oven and sprinkle with feta cheese.

Garnish with parsley if desired and enjoy!
