 The biryani, for those who do not know, is an Indian rice dish prepared with spices and meat (chicken, mutton, ..), eggs, or vegetables. Don't be discouraged by the list of ingredients, once the spice mixes are prepared, the hard part is done.



How To Make Ultimate Chicken Biryani with Grilled Chicken


 Ingredients

Yogurt 1/2 cup

Ginger garlic paste 1 ½ tbsp

Red chili powder 1 ½ tbsp

Turmeric powder 1 tsp

Salt to taste

Coriander powder 1 ½ tbsp

Cumin powder 1 tbsp

Black pepper powder 1 tsp

Lemon juice 2 tbsp

Oil 2 tbsp

Chicken leg & thigh 10 each

Water as required

Bay leaves 2

Cumin seeds 1 tbsp

Star anise 2

Black cardamom 2

Cinnamon sticks (1 inch) 2

Green cardamom 4-5

Salt 2 tbsp

Vinegar 3 tbsp

Oil 4 tbsp

Soaked rice 4 cups

Oil 1 cup

Onion (sliced) 2 cups

Ginger garlic paste 1 tbsp

Green chilies 5-6

Tomatoes (large sliced 5) 1 cup

Salt to taste

Red chili powder 1 tsp

Turmeric powder 1/2 tsp

Coriander powder 1 tsp

Cumin Powder 1/2 tsp

Red chili flakes 1 tsp

Marinated chicken 8 pieces

Yogurt 1/2 cup

Coriander (for garnish) as required

Mint (for garnish) as required

Boiled Rice

Gravy

Orange food color 1/2 tsp

Coriander (for garnish) as required)

Tomatoes (for garnish) as required

Green chilies (for garnish) as required

Lemon slices (for garnish) as required

Mint (for garnish) as required

Marinated chicken remaining pieces

Oil (for grilling) as required

DIRECTIONS

1 . Place cuts on the chicken pieces and transfers them into a bowl.

2 . Add yogurt, ginger garlic paste, salt, red chili powder, turmeric powder, coriander powder, cumin powder, black pepper powder, lemon juice, oil in the bowl too and marinate the chicken well for 1 hour.

3 . In a pot, bring water to boil and add salt, vinegar, oil, bay leaves, black cardamom, green cardamom, star anise, cumin seeds, cinnamon sticks, and soaked rice. Boil rice until 80% done, strain, and set aside.

4 . Now, in another pot, heat oil, add onion and cook until they turn golden brown in color. Add ginger-garlic paste and cook for a minute. Add green chilies and cook for another minute.

5 . Add tomatoes and cook until soft. Add 1/4 cup of water and cook for 5-6 minutes. Now add salt, red chili powder, turmeric powder, coriander powder, cumin powder, red chili flakes and cook for 2-3 minutes.

6 . Add 8 marinated chicken pieces and cook your chicken until completely done. Add yogurt and cook until oil separates.

7 . Garnish with coriander and mint, cover, and cook for 10-15 minutes on low flame.

8 . Layer another pot with chicken gravy with oil, then boiled rice, chicken gravy, boiled rice, orange food color, coriander, tomatoes, green chilies, lemon slices, mint. Cover with lid and steam for 15 minutes. Your biryani is ready.

9 . Grease pre-heated grill pan with oil and grill your rest of the marinated chicken from each side for 3-4 minutes until fully cooked.

10 . Serve Grilled Chicken with Biryani.
