Delicious, moist chicken breasts covered in a rich, creamy soupy sauce. Really easy to make on a busy weeknight. Add your favourite vegetables.
Ingredients
4 chicken breasts
Olive oil
1 teaspoon minced garlic
1 medium red onion, chopped
60 liters of water
Salt
Pepper
1 tablespoon of basil

Preparation
In a large skillet, brown the chicken breasts on both sides in olive oil, but without cooking them completely.
In the same skillet, cook the garlic, mushrooms and red onion in olive oil until tender.
Add the cream of mushroom, water, salt, pepper, basil and cayenne pepper. Stir until combined.
Add the chicken breasts to the pan, pour the sauce over the chicken. Cover the pan. Bring to simmer.
Cook until the chicken is done - the time will vary depending on the size of the chicken breasts.
Serve the chicken with the sauce.
