4 tbsp unsalted butter, melted, plus more for the scones
2 tbsp honey
1 tbsp fresh lemon juice
1 tbs brown sugar
2 tsp cinnamon, divided
4 large eggs, at room temperature - or one egg and 2 egg yolks 3/4 cup flour
2 cups day-old baguette dough, cut into
10 slices, at room temperature
2/3 cup pear halves, thinly sliced
1/2 cup apple sauce
9 oz cheddar cheese, grated
3/4 tsp salt
1/2 tsp baking powder Pinch of sugar
Preparation
Preheat oven to 400 degrees. Grease a baking sheet. In a small bowl, mix together the butter, honey, lemon juice, and brown sugar until well combined. In a separate large bowl, whisk together the eggs and flour until smooth. Add the pear slices, apple sauce, cheese, and honey mixture to the flour mixture and mix until just blended. Using a pastry cutter or a fork, quickly break up the day-old baguette for your scone topping into tiny pieces. Add to the flour mixture along with 2 tsp of cinnamon. Mix well with your hands to form a loose dough that is not too sticky. Place dough on a floured work surface and shape into an 8" circle. Cut into 8 wedge-shaped pieces (like pizza slices).
