Lamb Chops with Brussels Sprouts and Parmesan Potatoes

These Lamb Chops with Brussels Sprouts and Parmesan Potatoes are an absolute must for any mealtime. This dish also makes for a great meat-free option for your holiday menu! Ingredients

- 3 lamb chops

- 1 tablespoon olive oil 

- 1 tablespoon butter or vegan margarine 

- 1 cup frozen brussels sprouts, thawed 

- Salt and pepper, to taste 

- ¼ cup parmesan cheese, grated on top of potatoes for a healthy indulgence! 


Directions 

Mix salt and pepper with olive oil and parmesan cheese. Heat a frying pan on medium-high heat. Add the lamb chops to the pan. Cook for about 2 minutes per side. In a separate frying pan, add the butter or vegan margarine over medium-high heat as well as the thawed brussels sprouts...etc.
