The holidays are in full swing and that means there's lots of baking to be done. Cookies, pies, cakes—the list goes on! What better way to end a holiday meal or celebrate a birthday than with a freshly baked treat? Forgotten Cookies


Ingredients

Forgotten Cookies 

1 ½ cups all-purpose flour 

¼ cup unsweetened cocoa powder 

4 tablespoons unsalted butter, softened 

2 tablespoons sugar 

1 teaspoon salt 

¾ teaspoons baking powder 

2 egg yolks 

2 tablespoons milk 

1 teaspoon vanilla extract 

For the Sugar: 

3/4 cup granulated sugar 


Instructions

After reading through the instructions above you will find that there are several steps to making these cookies. Follow these instructions in order and you won't have a problem getting a batch of cookies in the oven at once.

1. preheat oven to 350ºF (175ºC). Lightly grease several cookie sheets with butter or non-stick cooking spray. 

2. In a medium bowl mix the flour, cocoa powder, and salt. Set aside. 

3. In a large bowl beat the butter, sugar, and egg yolks with an electric mixer until creamy, until light yellow in color (about 3 minutes). 

4. Add the milk and vanilla extract to the butter mixture and beat to combine well. 

5. Add half of the flour mixture to the butter mixture (may be combined with a rubber spatula) alternating with 2 tablespoons of water; beat until just combined after each addition. 

6. Add the remaining flour mixture and beat until just combined. Cover and refrigerate the dough for at least 2 hours, or overnight. 

7. Remove the dough from the refrigerator, roll into 1-inch (2.5 cm) balls, place on prepared cookie sheets, and bake for 15 minutes. 

8. To make the sugar: while the cookies are baking (at 15 minutes) in a small saucepan combine the sugar and 1 tablespoon of water over medium heat; stir to dissolve all of the sugar crystals. Turn heat to high and bring to a boil. Make sure that you keep stirring otherwise this will burn! * Keep your eye on it as it boils because it can burn very quickly.*
