Tikka masala spice mix is a blend of spices that can vary from household to household. This recipe involves a slow cooker and chicken. Most people prefer to use a whole chicken for this dish but you can use any part of the chicken if you prefer. The best part about cooking with a slow cooker is that you can just leave it unattended and let it do its thing.
Ingredients
1 lb boneless, skinless chicken breasts
15 oz. can chickpeas (garbanzo beans), drained and rinsed
2 tsp minced garlic
2 tsp minced ginger root
1 small onion, diced (about 1 cup)
4 oz. plain yogurt (I used low fat)
4 oz. cream
2 tsp garam masala
1 tsp paprika
1/2 tsp coriander
1/2 tsp cayenne pepper (optional)
Directions
Place chicken in the bottom of your slow cooker. I used a 4 qt. one.
Combine all other ingredients and mix until smooth and creamy.
Pour over chicken. Cook on low for 5 hours or high for 3 hours (until chicken is cooked through).
Serve over basmati rice, garnished with fresh cilantro, if desired.
