Perfect Chocolate Walnut Cookie

 Chocolate Walnut Cookies are a sweet, confectionery indulgence that's not for the faint of heart. Full of all-natural ingredients like dark chocolate, walnuts, whole wheat flour, and almond extract (just to name a few), they're the kind of cookie that reminds you why you bake.

The recipe is quite simple, with only four ingredients and a few basic steps. Also, recipes can easily be altered to make any kind of cookie you'd like to create, so feel free to experiment by swapping in any number of nuts or nuts paste (like an almond paste) you might have on hand.


Perfect Chocolate Walnut Cookie


Ingredients

1 cup butter, softened

½ teaspoon almond extract

1 cup dark chocolate chips

1 ½ cups flour, whole wheat, or all-purpose (all-purpose flour yields a slightly softer cookie)

2 cups chopped walnuts (not toasted) or 2 cups walnut paste (the walnut paste is highly recommended for flavor)

5 1/3 tablespoons sugar (brown, white, or a combination of both)


Preparation

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside. 

2. Add butter and extract to a large bowl and beat on medium speed until smooth and creamy, approximately one minute. 

3. Add chocolate chips and beat on low speed until combined. 

4. Stir in flour, then walnuts/paste. 

5. Slowly add sugar, a little at a time, as you stir the cookie dough to combine; the cookies will become increasingly softer at the end of this step. 

6. Scoop out 1 tablespoon of cookie dough and roll into a ball between your palms, then place it on the baking sheet approximately 2" apart (for a total of 12 balls). 

7. Bake for 10 minutes; after 8 minutes, turn off the oven and leave the door cracked open for one more minute to allow cookies to finish baking evenly
