 The perfect recipe for a Sunday dinner or an easy weekday meal is Chicken Fried Rice and Spring Rolls. This dish is easy to make in the time it takes to cook the rice. The best part about this recipe is that you can add any of your favorite vegetables such as broccoli florets when making this dish. 


Chicken Fried Rice and Spring Rolls


Ingredients

- 3/4 cup rice, uncooked

- 2 teaspoons olive oil

- 1 teaspoon soy sauce

- 1/2 pound chicken breast, chopped into small cubes

- 1 onion, chopped finely

- 2 cloves garlic, minced or grated on a Microplane


Preparation

- Add rice, soy sauce, and olive oil to a bowl. Stir until the rice is coated with soy sauce and olive oil, set aside for about 15 minutes

- Heat a medium-sized skillet over medium heat until hot (1 to 2 minutes). Pour chicken into the skillet, spreading it out evenly across the pan. Cook chicken until no longer pink. Stir in the onion and garlic (optional). Let cook for 1 minute or until the onion is softened

- Add the rice mixture to the chicken in the skillet. Stir until all of the rice is coated with chicken, onion, garlic, and soy sauce.
