Ingredients:
1/2 cup vegetable oil
1 1/2 cups granulated sugar
3 large eggs, at room temperature
3/4 cup unsweetened cocoa powder, sifted
2 teaspoons pure vanilla extract Topping:
1/4 cup packed dark brown sugar
3 tablespoons all-purpose flour
4 tablespoons unsweetened cocoa powder
2 tablespoons confectioners' sugar
4 tablespoons (1/4 stick) melted butter
Directions:
In a large bowl using an electric mixer beat the oil and granulated sugar together until well combined. Beat in the eggs one at a time and add the vanilla.
Add cocoa powder in batches to speed it up if needed. Mix for about 3-4 minutes, until it's well combined.
Pour into the springform pan. Wrap with foil and place in a large roasting pan. Add hot water to the roasting pan so that it comes about halfway up the side of the springform pan.
Bake in a preheated 375°F oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before removing from the pan and serving with whipped cream or ice cream or both!
