Southwest Chicken Salad

 Chicken salad is a quintessential summer dish, but unfortunately for many people, something about the mayo-based dressing causes an aversion. If you're one of them, this Southwest Chicken Salad recipe will be the perfect alternative. It's got all the flavors that make a chicken salad so tempting without irritating your stomach with mayonnaise. A little cilantro and lime give it some freshness and a southwestern feel, making it perfect for picnics and barbecues!

Southwest Chicken  Salad


2-3 cups cooked chicken breast, diced small

2 tablespoons chopped fresh cilantro

1/4 cup diced red bell pepper

1/4 cup crumbled queso fresco or feta cheese (I used a blend of goat cheese and feta for this salad)

Juice from 1 lime 


In a medium-sized bowl, combine the salad ingredients with your hands. If you're not a huge fan of cilantro, feel free to omit it! It adds some great flavor without overwhelming the rest of the salad. Refrigerate in an airtight container for up to 4 days.
